  • 130 grams of rice flour
  • 20 gr rice starch
  • 1 tablespoon of cream of tartar
  • 1/2 teaspoon of baking soda
  • 5 gr of salt
  • 20 ml of extra virgin olive oil
  • 110 grams of warm water

To fill:

  • a small potato
  • coarse salt
  • olives
  • half a red onion
  • a little bit of oil

Combine all the solid ingredients and mix them carefully. Add the liquid ingredients (water and oil) to obtain a mixturesticky,very different from the classic mash we are used to.

Arrange the mixture in a round oven pan with a diameter of about 22 cm. Once you have compacted it well, with a fork, make very superficial holes.

Peel the potato and cut it very finely. Place the potato slices on theflat breadstill raw, add pitted olives, coarse salt, a few slices of onion and a drizzle of oil.

Bake in the oven at 180 ° C for 30 minutes.

Please note: the 22 cm baking pan is not necessary, you can also make a circular shape on the classic pan after having lined it with baking paper, of course, with the pan the focaccia will have a perfect round shape, while if you do it by hand it could be more oval… but… after all, why formalize us!

Focaccia with brown rice flour

Here are the ingredients of oneclassic rice focaccia, leavened and baked in the oven like the classic schiacciate.

Ingredients for 4 people:

  • 250 grams of brown rice flour
  • 100 ml of soy milk
  • 200 ml of warm water
  • 12 g of fresh brewer's yeast or 25 g of dehydrated mother yeast

Again, start by mixing all the solid ingredients. Dissolve the yeast in warm water. Add all the liquid ingredients and mix until you get a smooth and easy to work mixture.

The dough will be sticky but by getting your hands dirty with rice flour, you'll be better off working it. You dobump upthe dough for about an hour.

After the rising time, roll out the dough in a pan lined with baking paper. Add aromatic herbs or spices, if you wish, add a few grains of coarse salt.

Cook, once again, at 180 ° C for 30 minutes.
